What is Curry Paste? Curry paste is a moist blend of ground or pounded herbs and/or spices and other seasonings. Curry paste is primarily known an important ingredient in Thai cuisine, and it can also be a generic commercial product which substitutes curry powders or spice blends used in other cuisines. A �marvelous aromatic mixture of freshly ground herbs and spices� Thai curry paste is a wet paste made up of mainly fresh herbs and spices. PASTES Red curry paste includes dried red chilli, shallots, garlic, galangal, lemon grass, coriander seed, kaffir lime peel and salt.       Panang curry paste is one of the many pastes based on red curry, but the recipe includes more dry spices. It gives out a little stronger fragrance than red curry.         Green curry paste includes green chilli, shallots, garlic, galangal, lemon grass, coriander seed, turmeric, kaffir lime peel and salt.         Masaman curry is an Indian influenced curry, and unlike other Thai curries it contains many ground dry spices as ingredients, including cumin, cinnamon, cardamom and cloves.       If you like a strong taste and the cooked curry is too mild. Apply some more curry paste directly into the curry, stir well. No need to re-cook. The taste will be simply stronger. DO NOT ADD TOO MUCH CURRY PASTE AT FIRST.
